Key Lime White Chocolate Cheesecake

Ingredients
  • 1 package Pamela's bite sized Graham Crackers
  • 6 Tablespoons Butter
  • 4 packages (8 ounces each) Cream Cheese, softened
  • 1-1/4 cups sugar
  • 4 Large Eggs
  • ½ package white chocolate chips, melted and cooled
  • 1 tablespoon cornstarch
  • ½ cup key lime juice
  • ½ tsp vanilla
Instructions
  1. Put the Crackers in a baggie and pound them to a fine crumb. (I usually use a rolling pin.)
  2. Melt the butter and add to the crumbs in a medium bowl. Mix well.
  3. Press the mixture into the bottom of a 9 or 10" springform pan.
  4. Melt the white chocolate chips in a double boiler (or, if you're feeling lazy, the microwave works too.)
  5. Put Sugar and Cream Cheese into stand mixer and mix until incorporated.
  6. Add Eggs, Corn Starch, Chocolate, Lime Juice, and Vanilla. Mix well.
  7. Pour mixture over crust in pan.
  8. Bake at 325 for 60-75 minutes or until it no longer jiggles.
