The BEST Healthy Creamy Tomato Soup

Ingredients
  • 1 Tbsp. Olive Oil
  • 2½ lbs. Ripe Tomatoes (about 6 Large) OR 2 28 Oz. Cans Chopped Tomatoes
  • 1½ C. Chopped Onion
  • 3 Garlic Cloves (minced)
  • 2 C. Homemade Chicken or Turkey Stock
  • ½ tsp. Salt
  • ¼ tsp. Black Pepper
  • 4 Oz. Neufantel Cheese (1/3 fat-cream-cheese)
  • ¾ C. Coarsely Chopped Basil
Instructions
  1. If using fresh Tomatoes, preheat Broiler.
  2. Halve Tomatoes and place, cut side down, on foil-lined baking sheet.
  3. Broil 5 minutes or until skins start to blacken.
  4. Remove skins.
  5. Heat Olive Oil in large sauce pan over medium-high heat.
  6. Saute Onion 3 minutes.
  7. Stir in Tomatoes; cook 2 minutes.
  8. Add Stock, Salt, and Pepper; Bring to a boil.
  9. Blend with an immersion blender until smooth.
