The BEST Healthy Creamy Tomato Soup

- 1 Tbsp. Olive Oil
- 2½ lbs. Ripe Tomatoes (about 6 Large) OR 2 28 Oz. Cans Chopped Tomatoes
- 1½ C. Chopped Onion
- 3 Garlic Cloves (minced)
- 2 C. Homemade Chicken or Turkey Stock
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- 4 Oz. Neufantel Cheese (1/3 fat-cream-cheese)
- ¾ C. Coarsely Chopped Basil
- If using fresh Tomatoes, preheat Broiler.
- Halve Tomatoes and place, cut side down, on foil-lined baking sheet.
- Broil 5 minutes or until skins start to blacken.
- Remove skins.
- Heat Olive Oil in large sauce pan over medium-high heat.
- Saute Onion 3 minutes.
- Stir in Tomatoes; cook 2 minutes.
- Add Stock, Salt, and Pepper; Bring to a boil.
- Blend with an immersion blender until smooth.
